According to a survey by the Brazilian Association of Bars and Restaurants (Abrasel), establishments that adapt their menus to the season see up to a 25% increase in nighttime sales, especially for hot dishes and comfort food, such as soups, broths, pasta, and stews.

To meet demand, experts recommend operational adjustments ranging from choosing the right utensils to investing in thermal packaging. "In delivery, the customer experience begins with the presentation of the order. Packaging that maintains temperature and prevents leaks conveys professionalism and increases the likelihood of repeat purchases," explains Mislene Lima, customer delight specialist and sales leader at Grupo Simão.

Adapting menus is also seen as a loyalty strategy. According to Lidiane Bastos, business administrator and CEO of Grupo Simão, seasonality can be used to reduce costs and surprise customers. "Seasonal menus allow us to work with fresh, cost-effective ingredients. They also create a sense of novelty, encouraging customers to return," she says.

In addition to the selection of dishes, the internal organization of kitchens is considered a decisive factor in ensuring a smooth operation. Research by the National Restaurant Association (ANR) shows that 70% of establishments that invest in high-performance equipment can reduce preparation time by up to 20%. "When there's a method and clarity in the routine, the restaurant can serve more orders in less time, while maintaining the quality of service," adds Mislene.

Another key focus is customer loyalty through delivery apps. According to PwC data, 71% of consumers consider packaging presentation and design a significant factor in their purchasing decision. Experts say investing in personalized containers, with a unique visual identity and thank-you messages, helps build a connection with the public and generates spontaneous publicity on social media.

"Customers who order through the app don't see the restaurant's dining room or in-person service. The perception of value and care comes from what they receive at their doorstep. That's why every detail counts," Mislene emphasizes.

How bars and restaurants can take advantage of delivery in winter, according to Lidiane Bastos:

  • Invest in thermal packaging.
    Containers that maintain food temperature until delivery are essential for broths, soups, and pasta. Choose leak-resistant and easy-to-handle options.
  • Invest in seasonal menus.
    Include winter dishes like stews, individual fondues, and hot desserts. Working with seasonal ingredients reduces costs and ensures freshness.
  • Organize your kitchen for agility
    High-performance utensils, such as sturdy pans, precision scales, and food processors, reduce preparation time by up to 20%.
  • Personalize your in-app service.
    Use packaging with your brand's visual identity, include thank-you messages, or offer simple gifts, such as artisan bread to accompany soup. These details increase loyalty.
  • Create loyalty promotions.
    Offer progressive discounts to customers who order more than once a month or family combos, which are especially popular during school holidays.
  • Invest in drinks and side dishes.
    Teas, coffees, wines in individual portions, and winter desserts are differentiators that increase the average ticket and complement the experience.
