August, with its lower temperatures, has become one of the hottest months for the delivery sector in Brazil. According to a survey by the Brazilian Association of Bars and Restaurants (Abrasel), establishments that adapt their menus to the season see up to a 25% increase in nighttime sales, especially in hot dishes and comfort food, such as soups, broths, pasta, and stews.
To meet the demand, experts recommend operational adjustments ranging from choosing suitable utensils to investing in thermal packaging. ‘In delivery, the customer’s experience begins with the presentation of the order. Packaging that maintains temperature and prevents leaks conveys professionalism and increases the chances of repeat purchases,’ explains Mislene Lima, a customer enchantment specialist and sales leader at Grupo Simão.
Menu adaptation is also seen as a loyalty strategy. According to Lidiane Bastos, a business administrator and CEO of Grupo Simão, seasonality can be used to reduce costs and surprise the public. ‘Seasonal menus allow working with fresh and cost-effective ingredients. Additionally, they create a sense of novelty, encouraging customers to order again,’ she states.
In addition to choosing dishes, the internal organization of kitchens is cited as a decisive factor for ensuring smooth operations. Research by the National Restaurant Association (ANR) shows that 70% of establishments that invest in high-performance equipment can reduce preparation time by up to 20%. ‘When there is method and clarity in the routine, restaurants can handle more orders in less time while maintaining service quality,’ Mislene adds.
Another point in evidence is loyalty through delivery apps. According to PwC data, 71% of consumers consider the presentation and design of the packaging as a significant factor in the purchase decision. For experts, investing in personalized containers with their own visual identity and thank-you messages helps to create a connection with the public and generates spontaneous advertising on social media.
“The customer who orders through the app doesn’t see the restaurant’s salon or face-to-face service. The perception of value and care is in what he receives at his doorstep. Therefore, every detail counts,” reinforces Mislene.
How bars and restaurants can take advantage of delivery in the winter, according to Lidiane Bastos:
- Invest in thermal packaging
The containers that keep the food temperature until delivery are essential for soups, broths, and pasta. Prefer leak-resistant and easy-to-handle options. - Bet on seasonal menus
Include winter dishes, such as stews, individual fondues, and hot desserts. Working with seasonal ingredients reduces costs and guarantees freshness. - Organize the kitchen for efficiency
High-performance utensils, such as resistant pans, precision scales, and processors, reduce preparation time by up to 20%. - Personalize the service on the app
Use packaging with the brand’s visual identity, include thank-you messages, or simple gifts, like artisan bread to accompany a soup. These details increase customer loyalty. - Create loyalty promotions
Offer progressive discounts to customers who order more than once a month or family combos, which have a strong appeal during school holidays. - Bet on beverages and accompaniments
Teas, coffees, individual portion wines, and winter desserts are differentiators that raise the average ticket and complement the experience.
