According to a survey by the Brazilian Association of Bars and Restaurants (Abrasel), establishments that adapt their menus to the season see up to a 25% increase in nighttime sales, especially in hot dishes and comfort food like soups, broths, pasta, and stews.

To meet demand, experts recommend operational adjustments ranging from choosing the right utensils to investing in thermal packaging. ‘In delivery, the customer experience starts with how the order is presented. Packaging that maintains temperature and prevents leaks conveys professionalism and increases the chances of repeat purchases,’ explains Mislene Lima, customer delight specialist and sales leader at Grupo Simão.

Menu adaptation is also seen as a loyalty strategy. According to Lidiane Bastos, business administrator and CEO of Grupo Simão, seasonality can be an ally in reducing costs and surprising customers. ‘Seasonal menus allow working with fresh, cost-effective ingredients. Additionally, they create a sense of novelty, encouraging customers to order again,’ she says.

Beyond dish selection, internal kitchen organization is highlighted as a decisive factor for smooth operations. Research by the National Restaurant Association (ANR) shows that 70% of establishments investing in high-performance equipment can reduce preparation time by up to 20%. ‘When there’s method and clarity in routine, restaurants can handle more orders in less time while maintaining service quality,’ adds Mislene.

Another key point is loyalty through delivery apps. According to PwC data, 71% of consumers consider packaging presentation and design a significant factor in purchasing decisions. Experts say investing in customized containers with unique branding and thank-you messages helps build customer connections and generates organic social media publicity.

‘The customer ordering via an app doesn’t see the restaurant’s dining area or in-person service. Their perception of value and care comes from what they receive at their doorstep. That’s why every detail matters,’ emphasizes Mislene.
